Turn the “if only” around, Megan. I think many of your readers (me) wish they could write as well as you; cook as well, bake as well; take pictures as well; and food style as well. You have mad talent and it’s always a treat to read your work.

Now about those hand pies…I made some olallieberry pop-tarts for a friend who adores olly berries. But I wasn’t happy with them. I thought I wonder if there is a recipe for those gawd-awful Hostess pies, but ones you actually want to eat. And ta-da, this pops into my box! Hope to try them this week.

Thank you, Mary! You’re absolutely right. I’m certainly appreciative of all the good I’ve got…would just be so nice to have a balance of feeling o.k. in the here and now and having a little ‘if only’ every now and again. Too much of one or the other makes a girl a little crazy, no? And yes, try these hand pies! If I were to do them again, I may add a little mascarpone or bit of almond paste in with the apricots. But if you’re using seasonal, sweet fruit–they’ll be great the way they are. Enjoy.
